exotic fruit salad with thai coconut cream- εξωτικη φρουτο-σαλατα με κρεμα καρυδας













Tools needed: blender
Ingredients:
1/4 cup papaya cut into cubes
1/4 cup mango cut into slices
1/4  cup apple cut into cubes
1/4  cup fresh cherries
1/2  cup dragon fruit cut into cubes
1 tbsp Sun flower seeds
Preparation:
Place all the fruits into a bowl
Serve:
Serve with coconut cream.dry nuts or cookies flour















Tools needed: blender
Ingredients:
2 cups coconut meat
2-3 tbsp agave nectar
1/2 tsp grounded vanilla
1/3 glass almond milk
Preparation:
Freeze the coconut 1 hour before use
Add the ingredients into high speed blender and blend very well
Refrigerate afterwards
Serve:
Serve as cream topping fruit salads, cakes, cookies and ice creams

How to make home made raw olives



















Almost all the olives in the market  use preservatives and chemicals and this is not consider as raw food 
so the best is to make olives by ourselves

We buy unripe olives, we slash with the knifes 2-3 times and we soaked in the water for 10-12 days and change the water daily to remove the bitterness
After we place them into a jar with water add 7% salt and vinegar 3 parts salt 2 parts vinegar top we add olive oil to cover the olives and leave them for a 3 month minimum depend the type of the olive

On green olives we can add slices of lemon garlic rosemary oregano etc
Some kind of olives the huge ones needs to smash them with a stone instead of slash them
Some kind of black olives need to be soaked in the water for 10 days and then we add thick salt and let them in a bowl for a day before we add them in vinegar/olive oil and water
the soft watering type we don’t slash them and as it is

GREEN OLIVE PASTE



Tools needed: food processor
Ingredients:
1/2 kilo green olives
1 tsp lemon juice
1/2 tsp Himalaya salt
3-4 tbsp olive oil
1/3 cup chopped red bell pepper
Little chopped fresh parsley
1/3 cup soaked walnuts
2 chopped garlic glove
1 tbsp caper seeds
half fresh red chilly finely chopped
Salt as needed
Preparation:
Keep at side the caper seeds
Add first the olive oil the herbs and the walnuts
Work with the texture add the rest of ingredients
We add salt or spices to our taste
To avoid liquid paste can add ground walnuts butter afterwards
Keep refrigerate
For longer storing time fill with oil to cover the surface
To know:
Typical olive paste is very oily, consecrate and salty

SAVORY BLACK OLIVE PASTE
















Ingredients:
½ kilo Kalamata type black olives (remove seeds)
½ tsp apple cider vinegar
Salt as you taste
1/3 cup soaked almonds (soak for 30 hours)
1/3 cup chopped green bell pepper
Pinch of black ground pepper
Little dry oregano
1 finely chopped garlic glove
3 tbsp olive oil
2-3 dry soaked sun-dry tomatoes
Preparation:
Remove the olive seeds
Keep at side the bell pepper
At food processor add the olive oil and the almond with the herbs and process
Add the bell pepper and pulse few times
Serve:
Serve as savory side dish for crackers, salads
Refrigerate afterwards
